Glutenfree scones Buttery delightful tea scones

  • 2 1/2 cups gluten-free all-purpose flour blend (containing rice flour, tapioca starch, and potato starch and xanthan gum)
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup milk (or buttermilk)
  • 1 teaspoon vanilla extract
  • 1 large egg for egg wash

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the gluten-free flour blend, sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  • In a separate small bowl, whisk together the egg, milk (or buttermilk), and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Turn the dough out onto a lightly floured surface. Gently pat it into a 1-inch thick circle.
  • Use a biscuit cutter or a knife to cut out scones. You should get around 8 scones.
  • Place the scones onto the prepared baking sheet.
  • Brush the top of each scone with egg wash.
  • Bake for 18-22 minutes, or until golden brown.
  • Let cool slightly before serving. Serve warm with clotted cream and jam, butter, or your favorite toppings.
