  • 1 pound Ground Beef (85-90% lean)
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 2 teaspoons Chili Powder
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Tomato Paste
  • 1/2 cup Beef Broth
  • 12 Hard Taco Shells
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 1 head Lettuce, shredded
  • 2 medium Tomatoes, diced
  • 1/2 medium Red Onion, thinly sliced
  • 1/4 cup Cilantro, chopped
  • 1 medium Avocado, sliced or cubed
  • 1/2 cup Sour Cream
  • 1/2 cup Salsa

Instructions

  • Preheat your oven to 375°F (190°C). Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it up with a wooden spoon, and cook for 6-8 minutes until no pink remains. Drain any excess fat. Lower the heat to medium. Add the diced onion and sauté for 3-4 minutes until softened and translucent. Stir in the minced garlic and cook for another minute until fragrant.
  • Stir in the chili powder, cumin, paprika, oregano, salt, and black pepper. Cook for about 1 minute until fragrant. Add the tomato paste and cook, stirring, for about 2 minutes to caramelize. Pour in the beef broth. Bring the mixture to a gentle simmer and cook for 5-7 minutes, stirring occasionally, until the liquid has mostly reduced and the sauce has thickened. Taste and adjust seasonings if needed.
  • Arrange the hard taco shells in a single layer in a 9×13 inch baking dish (use crumpled aluminum foil between shells to help them stand upright). Spoon the warm ground beef mixture evenly into each taco shell, filling them about halfway. Generously sprinkle a mixture of shredded cheddar and Monterey Jack cheese over the beef in each shell.
  • Carefully transfer the baking dish to your preheated oven and bake for 10-12 minutes, or until the taco shells are lightly crispy and the cheese is beautifully melted and bubbly. Keep an eye on them to prevent over-browning.
  • While tacos are baking, prepare your fresh toppings: shred the lettuce, dice the tomatoes, thinly slice the red onion, chop the cilantro, and slice or cube the avocado. Have your sour cream and salsa ready.
  • Once out of the oven, carefully remove the hot baking dish. Using tongs, gently lift each baked taco onto individual serving plates. Let everyone customize their tacos with generous amounts of shredded lettuce, diced tomatoes, sliced red onion, fresh cilantro, avocado, a dollop of sour cream, and a spoonful of salsa.
