  • 1 medium yellow or white onion, diced
  • 8 ounces cremini or button mushrooms, sliced
  • 2 cloves garlic, minced

  • 1 tablespoon Dijon mustard
  • 1 cup full-fat sour cream
  • 1 pound wide egg noodles
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  • Add diced onion and sliced mushrooms to the skillet and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.
  • Sprinkle all-purpose flour over the beef and vegetables and cook for 1 minute, stirring constantly.
  • Gradually pour in beef broth, stirring to prevent lumps. Add Worcestershire sauce and Dijon mustard. Bring to a simmer and cook until the sauce has thickened slightly, about 5-10 minutes.
  • While the sauce is simmering, cook egg noodles according to package directions. Drain well.
  • Remove the skillet from the heat and stir in sour cream until smooth. Be careful not to boil the sauce after adding the sour cream, as it can curdle.
  • Add the cooked egg noodles to the skillet and toss to coat with the sauce.
  • Season with salt and pepper to taste. Garnish with fresh parsley and serve immediately.
