Ingredients

  • Bell Peppers (Red, Yellow, Orange, Green)
  • Ground Turkey
  • Cooked Rice (Long-grain)
  • Onion
  • Garlic
  • Diced Tomatoes
  • Tomato Sauce
  • Italian Seasoning
  • Salt
  • Pepper
  • Garlic Powder
  • Paprika
  • Cheese (Mozzarella, Cheddar, Parmesan – Optional)
  • Olive Oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Sauté onion and garlic in olive oil until softened.
  • Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
  • Stir in diced tomatoes, tomato sauce, cooked rice, Italian seasoning, salt, pepper, garlic powder, and paprika.
  • Cut the tops off the bell peppers and remove the seeds and membranes.
  • Stuff each pepper with the ground turkey mixture.
  • Place the stuffed peppers in a baking dish and add a small amount of water to the bottom of the dish.
  • Bake for 30-40 minutes, or until the peppers are tender and the filling is heated through. If using cheese, sprinkle it over the peppers during the last 10 minutes of baking.
  • Let the stuffed peppers cool slightly before serving.
