  • 1.5 pounds of ground beef
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 14.5-ounce can of diced tomatoes, undrained
  • 15-ounce can of whole kernel corn, drained
  • 2 pounds of Yukon gold potatoes, peeled and cubed
  • 10.75-ounce can of condensed cream of mushroom soup
  • 2 cups of shredded cheddar cheese, divided
  • 1 tablespoon of Worcestershire sauce
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Add the diced onion and green bell pepper to the skillet and cook until softened, about 5 minutes.
  • Stir in the diced tomatoes, corn, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  • In a large bowl, combine the cubed potatoes and cream of mushroom soup. Mix well.
  • Spread the potato mixture evenly in the bottom of a 9×13 inch baking dish.
  • Pour the ground beef mixture over the potato layer.
  • Sprinkle 1.5 cups of the shredded cheddar cheese over the top.
  • Bake in the preheated oven for 60 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  • Remove from the oven and sprinkle the remaining 1/2 cup of cheddar cheese over the top. Let stand for 10-15 minutes before serving.
