Toss the sweet potato rounds with olive oil, salt, and pepper. Arrange them in a single layer on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until they are tender and slightly browned. Flip halfway through for even cooking.
Remove the sweet potato rounds from the oven and let them cool slightly. Top each round with a small amount of crumbled feta cheese. Drizzle with honey and sprinkle with fresh thyme leaves.
