  • Preheat your oven to 400°F (200°C). Wash, peel (if desired), and cut the carrots into 1-inch pieces. Place them in a large bowl.
  • In a small bowl, whisk together the olive oil, honey, minced garlic, soy sauce, salt, and pepper.
