  • ¾ cup light brown sugar, packed
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon espresso powder
  • 1-2 tablespoons cold water or milk
  • 1.5 quarts premium vanilla ice cream, slightly softened

Instructions

  • Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper or silicone baking mats. In a medium bowl, whisk together the all-purpose flour, Dutch-processed cocoa powder, baking soda, and salt. Set aside.
  • In a large bowl, using an electric mixer, cream together the softened unsalted butter, granulated sugar, and light brown sugar until light, fluffy, and pale in color (about 2-3 minutes). Beat in the large egg until fully combined, followed by the pure vanilla extract and espresso powder.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix. Add 1-2 tablespoons of cold water or milk, mixing until just incorporated, to make the dough pliable.
  • Using a 1.5-inch ice cream scoop or a tablespoon, drop rounded balls of dough onto your prepared baking sheets, spacing them about 2 inches apart. Gently press to slightly flatten them. Bake for 8-10 minutes, or until the edges are set and the centers still look slightly soft. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  • Once cookies are completely cool, let your premium vanilla ice cream sit at room temperature for 10-15 minutes to soften slightly. Scoop a generous amount of softened ice cream onto the flat side of one cookie. Gently top with another cookie, flat side down, and lightly press to create an even filling. If ice cream melts, freeze for 10-15 minutes to firm up.
  • If desired, immediately roll the sides of each assembled sandwich in sprinkles, mini chocolate chips, or finely chopped nuts to coat the exposed ice cream. Work quickly. Wrap each ice cream sandwich tightly in plastic wrap. Place the wrapped sandwiches into an airtight freezer-safe container and freeze for at least 2-4 hours, or preferably overnight, until thoroughly firm.
