  • 3 lb beef chuck roast
  • 1 lb baby potatoes
  • 4 carrots, peeled and chopped
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Set your Instant Pot to ‘Sauté’ mode. Add olive oil, and once it’s hot, sear the beef chuck roast until its sides are browned.
  • Remove the roast and add onions and garlic to the pot. Sauté for 2-3 minutes until they become fragrant.
  • Pour in some beef broth and gently scrape the bottom of the pot to lift any delicious bits stuck from the searing.
  • Place the roast back into the pot, and add potatoes, carrots, remaining broth, Worcestershire sauce, and thyme.
  • Secure the lid and set the Instant Pot to ‘Pressure Cook’ on high for 60 minutes.
  • Allow the pressure to release naturally for 10 minutes before safely venting the remaining pressure.
  • Slice the roast against the grain, served alongside the perfectly tender potatoes and carrots.
