  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted Butter, softened
  • 2 Large Eggs
  • 3/4 cup Whole Milk
  • 1 tablespoon Orange Zest
  • 1 cup Raisins
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups Powdered Sugar
  • 2 tablespoons Orange Juice
  • 1 tablespoon Lemon Juice
  • 1-2 tablespoons Water

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray and dust lightly with flour, tapping out excess.
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, ground nutmeg, and salt.
  • In a separate, smaller bowl, gently whisk the large eggs, then stir in the whole milk, vanilla extract, and orange zest.
  • Create a well in the center of your dry ingredients and pour in the wet mixture. Mix gently with a spatula until just combined. Do not overmix.
  • Gently fold in the raisins until evenly distributed.
  • Pour the batter into the prepared loaf pan, spreading it evenly. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, loosely tent with aluminum foil.
  • Let the cake cool in the pan for 10-15 minutes on a wire rack before inverting it onto the rack to cool completely.
  • While the cake cools, prepare the glaze. In a medium bowl, combine powdered sugar. Gradually whisk in fresh orange juice and lemon juice, starting with 1-2 tablespoons of each. Add water, a quarter teaspoon at a time, until the glaze is a thick but pourable consistency. If too thin, add more powdered sugar; if too thick, add more water. Taste and adjust citrus as needed.
  • Once the Irish Tea Cake has cooled completely, place it on a serving platter or a wire rack with parchment paper underneath. Drizzle the prepared citrus glaze over the top of the cake, allowing it to drip down the sides. Let the glaze set for 15-20 minutes before slicing and serving.
