Irish Whiskey Cake Recipe: Decadent dessert, easy preparation.

  • 1 3/4 cups granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1/2 cup Irish whiskey (for cake batter)
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups powdered sugar (for glaze)
  • 1/4 cup Irish whiskey (for glaze)
  • 2 tablespoons melted butter (for glaze)
  • Pinch of salt (for glaze)

Instructions

  • Preheat your oven to 325°F (160°C). Generously butter and flour a 10-12 cup Bundt pan.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, using an electric mixer, cream together the softened unsalted butter with both granulated and brown sugars until light, fluffy, and pale (3-5 minutes).
  • Beat in the large eggs one at a time, ensuring each egg is fully incorporated before adding the next. Scrape down the sides of the bowl as needed.
  • Stir in the vanilla extract.
  • Alternately add the dry ingredients and the buttermilk to the wet mixture, beginning and ending with the dry ingredients. Mix on low speed just until combined, being careful not to overmix.
  • Gently fold in 1/2 cup of Irish whiskey into the batter.
  • Pour the batter evenly into your prepared Bundt pan, smoothing the top with a spatula.
  • Bake for 55-65 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean. The cake should be golden brown and spring back to the touch.
  • Let the cake cool in the pan on a wire rack for about 15-20 minutes. Then, carefully invert the cake onto the wire rack to cool completely.
  • While the cake cools, whisk together 2 cups of powdered sugar, 1/4 cup of Irish whiskey, 2 tablespoons of melted butter, and a pinch of salt in a small bowl until smooth, creamy, and pourable. Adjust consistency with more whiskey or powdered sugar if needed.
  • Once the Irish Whiskey Cake has cooled completely, place the wire rack holding the cake over a baking sheet to catch drips. Slowly and lavishly pour the prepared whiskey glaze evenly over the entire cake, allowing it to cascade down the sides. Let the glaze set for a few minutes before slicing and serving.
