Instructions

  • Preheat oven to 350°F (175°C).
  • In a bowl, combine peanut butter, sweetener, egg, vanilla extract, and baking soda.
  • Mix until well combined.
  • Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  • Flatten each cookie with a fork, creating a criss-cross pattern.
  • Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
