Easy pecan pie bars recipe Lazy girl dessert simple pecan bars

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) salted butter, softened
  • 1/2 cup brown sugar
  • 2 cups pecans, chopped
  • 3 large eggs
  • 1 cup light corn syrup
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  • In a large bowl, combine the flour, salt, butter, and brown sugar. Mix until the mixture resembles coarse crumbs. Press the mixture firmly and evenly into the prepared baking pan.
  • In a separate bowl, whisk together the eggs, corn syrup, granulated sugar, vanilla extract, and salt. Stir in the chopped pecans.
  • Pour the pecan filling over the crust. Bake for 30-35 minutes, or until the filling is set around the edges but still slightly jiggly in the center.
  • Let the bars cool completely in the pan before cutting into squares. Use the parchment paper overhang to lift the bars out of the pan for easier cutting.
