Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt for 20-30 seconds to ensure even distribution.
  • In a separate, large bowl, using an electric mixer, cream together the softened unsalted butter and 1 3/4 cups granulated sugar until light, fluffy, and pale in color (about 2-3 minutes).
  • Add the large eggs, one at a time, beating well after each addition until fully incorporated. Scrape down the sides of the bowl as needed.
  • Stir in the fresh lime zest, fresh lime juice, and vanilla extract. If desired, add a few drops of green food coloring and mix until just combined.
  • With the mixer on low speed, gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Be careful not to overmix.
  • Cover the bowl with plastic wrap and chill the dough for at least 30 minutes, or up to an hour.
  • Prepare the sugar coatings: In one shallow bowl, add 1/2 cup granulated sugar. In another shallow bowl, add 1 cup powdered sugar.
  • Using a small cookie scoop (about 1.5 tablespoons), form uniform dough balls. Roll each ball first in the granulated sugar, then immediately and generously in the powdered sugar.
  • Place the coated dough balls about 2 inches apart on the prepared baking sheets.
  • Bake for 9-11 minutes, or until the edges are lightly set and the centers are still slightly soft. Do not overbake. Look for the beautiful crackles to appear on top.
  • Once out of the oven, let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
