  • 1 1/2 cups (300 grams) Granulated Sugar
  • 2/3 cup (160 ml) Evaporated Milk
  • 7 ounces (200 grams) Marshmallow Fluff
  • 2 cups (340 grams) White Chocolate Chips
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 2 cups Lucky Charms Cereal
  • 1/2 cup Extra Lucky Charms Marshmallows
  • 1 cup (120 grams) Powdered Sugar
  • 1-2 tablespoons Milk
  • 2 tablespoons Marshmallow Fluff
  • 1/4 teaspoon Vanilla Extract
  • Pinch of Salt

Instructions

  • Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides to easily lift the fudge out later. Lightly spray the parchment with non-stick cooking spray.
  • In a heavy-bottomed saucepan, combine the unsalted butter, granulated sugar, and evaporated milk. Place the saucepan over medium heat, stirring constantly with a whisk or silicone spatula until the butter is fully melted and the sugar has dissolved.
  • Bring the mixture to a rolling boil, stirring continuously to prevent scorching. Once it reaches a full boil, let it boil for exactly 5 minutes without stirring. After 5 minutes, immediately remove the saucepan from the heat.
  • Carefully, yet quickly, stir in the marshmallow fluff, white chocolate chips, vanilla extract, and a pinch of salt. Stir vigorously until everything is fully melted and beautifully smooth, without any lumps. The mixture should be thick, glossy, and uniform in color.
  • Gently fold in 2 cups of the Lucky Charms cereal (both the oat pieces and marshmallows). Be careful not to overmix, as you want to keep those marshmallows intact but well distributed.
  • Pour the hot fudge mixture into your prepared baking pan, spreading it evenly with a spatula. While the fudge is still warm, generously sprinkle an additional half cup of Lucky Charms marshmallows over the top; press them down ever so slightly so they adhere.
  • Let the fudge cool completely at room temperature for several hours, or expedite the process by placing it in the refrigerator for about 1-2 hours until firm. This patience is vital for the perfect set!
  • For the magical marshmallow drizzle, grab a small bowl and gently whisk together the powdered sugar, a tablespoon of milk, a dollop of marshmallow fluff, a tiny splash of vanilla extract, and a pinch of salt. Start with a small amount of milk, gradually adding more a teaspoon at a time until you achieve a smooth, pourable consistency for your drizzle.
  • Once your Lucky Charms Fudge is completely firm and set, lift the fudge from the pan using the parchment paper overhang and carefully place it on a cutting board. Using a sharp, warm knife, slice the fudge into 1-inch squares. Using a spoon or a piping bag with a small round tip, artfully zig-zag the marshmallow drizzle over the top of the fudge squares. For a truly professional look, you can also add a tiny extra Lucky Charms marshmallow to the center of each drizzled square.
