Lucky Charms Krispie Treats Recipe.

Ingredients

  • 1/4 cup Unsalted Butter
  • 10 ounces Mini Marshmallows (plus 1 cup extra Lucky Charms marshmallows)
  • 1 teaspoon Vanilla Extract
  • 1 pinch of Salt
  • 6 cups Rice Krispies Cereal
  • 5 ounces Lucky Charms Cereal (one standard box)
  • Non-stick Cooking Spray
  • 1 cup White Chocolate Chips or Bar
  • 1 teaspoon Vegetable Shortening or Coconut Oil (optional)
  • 2 tablespoons Rainbow Sprinkles (Magical Unicorn mix suggested!)

Instructions

  • Lightly spray a 9×13 inch baking pan with non-stick cooking spray or line it with parchment paper for easy removal later.
  • In a large, heavy-bottomed pot or Dutch oven, melt the unsalted butter over low heat. Once the butter is mostly melted, add the mini marshmallows and continue stirring constantly until they are completely smooth and gooey. Remove pot from heat.
  • Stir in the vanilla extract and a pinch of salt.
  • Immediately add the Rice Krispies cereal and the entire box of Lucky Charms cereal (cereal and marshmallows combined, don’t separate them yet!). Work quickly and gently to incorporate the cereal into the marshmallow mixture until it’s evenly coated.
  • Stir in an additional cup of just the Lucky Charms marshmallows (you can pick these out of another box or buy a bag of just the marshmallows if you’re feeling extra indulgent!).
  • Press the mixture firmly and evenly into your prepared 9×13 inch pan. Use a buttered spatula, a piece of parchment paper, or clean, slightly damp hands. Don’t press too hard. Allow the treats to cool completely at room temperature for at least 1-2 hours.
  • In a microwave-safe bowl, combine the white chocolate chips or chopped white chocolate bar. Microwave in 30-second intervals, stirring vigorously after each interval, until the chocolate is completely melted and smooth. If too thick, stir in a teaspoon of vegetable shortening or coconut oil.
  • Once your Lucky Charms Rice Krispie Treats are completely cool and set, drizzle the smooth, melted white chocolate back and forth over the entire pan. While still wet, generously scatter rainbow sprinkles over the top. Allow the white chocolate to set completely (speed up by placing pan in refrigerator for 10-15 minutes) before cutting into squares.
