M&M Cookie Bars: Ultimate recipe, chewy, easy.

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups M&M’s, plus an additional 1/2 cup for topping
  • For Simple Vanilla Glaze:
  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides. Set aside.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light, fluffy, and pale in color (about 2-3 minutes).
  • Beat in the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed. Stir in the vanilla extract until just combined.
  • In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  • Gently fold in 1 ½ cups of M&M’s. Press the cookie dough evenly into the prepared 9×13 inch baking pan. Scatter the remaining ½ cup of M&M’s over the top.
  • Bake for 25-30 minutes, or until the edges are golden brown and a wooden skewer inserted into the center comes out with moist crumbs attached. Let the bars cool completely in the pan on a wire rack.
  • While bars cool, prepare the glaze: In a small bowl, combine powdered sugar, 2 tablespoons milk, and vanilla extract. Whisk vigorously until smooth. Add more milk a teaspoon at a time if needed, until the glaze is pourable but still thick.
  • Once the M&M Cookie Bars are completely cooled, lift them out of the pan using the parchment paper. Drizzle the prepared vanilla glaze generously over the cooled bars. Allow the glaze to set for about 10-15 minutes.
  • Once the glaze is set, use a sharp knife to cut the large slab into individual squares (12-16 bars).
