  • 200 grams of granulated sugar
  • 1/4 cup of freshly squeezed lime juice
  • Zest of 2 limes
  • 1/4 cup of high-quality blanco tequila
  • 200 grams of sour cream
  • 200 grams of graham crackers
  • 100 grams of unsalted butter, melted
  • 2 tablespoons of orange liqueur (Cointreau or Triple Sec)

Instructions

  • Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  • Mix graham cracker crumbs with melted butter. Press this mixture firmly into the pan’s base to form a solid crust. Chill in the refrigerator.
  • Beat cream cheese and sugar until smooth. Add lime juice, zest, tequila, and orange liqueur, blending well.
  • Mix in eggs one at a time. Gently fold in sour cream.
  • Pour the filling over the crust, place in a water bath, and bake for 50-60 minutes until the center slightly jiggles.
  • Turn off the oven, crack the door, and allow the cheesecake to cool inside. Chill in the refrigerator for 4 hours or overnight.
