  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 teaspoons matcha powder
  • 1 teaspoon vanilla extract
  • 2 teaspoons gelatin powder
  • 1/4 cup cold water (for gelatin)
  • 1/4 cup warm water (for matcha paste)
  • 2 cups mixed berries
  • 1/4 cup granulated sugar (for compote)
  • 1 tablespoon lemon juice
  • 1 tablespoon water (for compote)

Instructions

  • In a small bowl, sprinkle 2 teaspoons of gelatin powder over 2 tablespoons of cold water. Stir quickly and let it sit for 5-10 minutes to bloom.
  • In a medium saucepan, combine the heavy cream, whole milk, and 1/2 cup granulated sugar. Place over medium heat, stirring occasionally, until the sugar is completely dissolved and the mixture is warm, just shy of a simmer. Do not let it boil.
  • In a small bowl, whisk together 2 tablespoons of warm water with 2 teaspoons of matcha powder until a smooth, lump-free paste is formed.
  • Remove the saucepan from the heat. Add the matcha paste, bloomed gelatin, and vanilla extract to the warm cream mixture. Whisk thoroughly until the gelatin is completely dissolved and the matcha is evenly dispersed, creating a uniform green color. Ensure to scrape the bottom of the pan.
  • Pour the mixture evenly into your desired serving dishes (ramekins, glasses, teacups). If you plan to unmold, lightly oil the ramekins beforehand. Refrigerate for at least 4 hours, or preferably overnight, until fully set with a delicate wobble. Avoid moving the panna cotta too much while setting.
  • In a small saucepan, combine the mixed berries, 1/4 cup granulated sugar, lemon juice, and 1 tablespoon of water. Bring to a gentle simmer over medium heat, stirring occasionally. Simmer for 8-10 minutes, or until berries are tender and the sauce has thickened slightly. Remove from heat and cool completely before serving.
  • Once the Matcha Panna Cotta is set and chilled, unmold onto serving plates if desired (briefly dip ramekin bottoms in warm water for 10-15 seconds). Spoon a generous dollop of the cooled Fresh Berry Compote over each panna cotta. Garnish as desired with extra matcha powder, fresh mint, berries, or edible flowers.
