½ cup (100g) Granulated Sugar
1 cup (225g) Unsalted Butter, cold and cubed
Pinch of Salt
1 (14-ounce) can (397g) Sweetened Condensed Milk
½ cup (113g) Unsalted Butter
½ cup (100g) Brown Sugar, packed
2 tablespoons Golden Syrup (or Light Corn Syrup)
Pinch of Salt
12 ounces (340g) Semi-Sweet Chocolate Chips
1 tablespoon Vegetable Shortening or Coconut Oil
Optional Decorations: Sprinkles, edible glitter, white chocolate drizzle, mini M&Ms
Instructions
Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
In a bowl, combine flour, sugar, butter, and salt. Mix until it resembles coarse crumbs.
Press the mixture into the prepared pan and bake for 20-25 minutes, or until lightly golden.
In a saucepan, combine sweetened condensed milk, butter, brown sugar, and golden syrup. Cook over low heat, stirring constantly, until the mixture thickens and turns golden brown (about 15-20 minutes).
Pour the caramel over the baked shortbread base.
Melt chocolate chips and shortening (or coconut oil) in a double boiler or microwave in 30-second intervals, stirring until smooth.
Pour the melted chocolate over the caramel layer and spread evenly.
Decorate with sprinkles, edible glitter, or other desired decorations.
Chill in the refrigerator for at least 2 hours.
