  • 50 grams of granulated sugar (¼ cup)
  • 175 grams of salted butter (¾ cup), cold and cubed
  • 1 teaspoon of vanilla extract (optional)
  • 397 grams of sweetened condensed milk (1 can)
  • 2 tablespoons of golden syrup
  • 50 grams of salted butter (¼ cup), cubed
  • 50 grams of light brown sugar (¼ cup)
  • 200 grams of dark chocolate (7 oz), chopped
  • 1 teaspoon of vegetable oil
  • Christmas sprinkles

Instructions

  • For the Shortbread Base: Preheat your oven to 160°C (320°F). In a bowl, combine flour, sugar, and cubed butter. Rub the butter into the flour until the mixture resembles breadcrumbs. Add vanilla extract (if using).
  • Press the mixture firmly into a lined baking pan. Chill for 30 minutes. Poke holes all over with a fork.
  • Bake for 30-40 minutes, or until lightly golden. Let it cool completely.
  • For the Caramel Layer: In a saucepan, combine sweetened condensed milk, golden syrup, butter, and brown sugar. Cook over medium heat, stirring constantly, until the mixture thickens and turns a caramel color (about 10-15 minutes).
  • Pour the caramel over the cooled shortbread base. Let it cool completely.
  • For the Chocolate Topping: Melt the dark chocolate with vegetable oil. Spread the chocolate evenly over the cooled caramel layer.
  • Immediately sprinkle with Christmas sprinkles. Let the chocolate set completely.
  • Use a warm knife to cut the Millionaire Shortbread into triangles to resemble Christmas trees.
