  • 2-3 tablespoons milk

Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  • In a large mixing bowl, using an electric mixer, cream together the softened unsalted butter, granulated sugar, and brown sugar until the mixture is light in color and fluffy, about 2-3 minutes.
  • Beat in the eggs one at a time, incorporating each fully before adding the next. Then, add the pure vanilla extract, pure peppermint extract, and the softened cream cheese. Mix until just combined.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  • If desired, gently fold in a few drops of green food coloring until your desired shade is achieved.
  • Fold in the dark chocolate chips until they are evenly distributed throughout the dough.
  • Using a cookie scoop (about 1.5-2 tablespoons per cookie), drop rounded balls of dough onto your prepared baking sheets, ensuring they are about 2 inches apart.
  • Bake for 9-11 minutes, or until the edges are lightly golden, but the centers still look slightly soft and puffed. Do not overbake.
  • Once out of the oven, let them cool on the baking sheets for about 5 minutes before carefully transferring them to a wire rack to cool completely.
  • To make the Creamy Mint Glaze: In a medium bowl, whisk together the powdered sugar, a tablespoon of milk, and a tiny dash of pure peppermint extract. Add more milk, half a teaspoon at a time, until you reach your desired consistency.
  • If desired, stir in a drop or two of green food coloring until you achieve your preferred shade for the glaze.
  • Once the cookies have cooled completely, generously drizzle the creamy mint glaze over each cookie using a spoon, or dip half of each cookie into the glaze.
  • Place the glazed cookies back on the wire rack over a sheet of parchment paper and allow the glaze to set for at least 15-20 minutes, or until firm to the touch.
