  • 2 tablespoons olive oil
  • 1 pound Italian sausage (sweet or hot)
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 6 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Mozzarella Cheese
  • Fresh basil leaves, for garnish

Instructions

  • In a large pot or Dutch oven, heat olive oil over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned.
  • Add onion and garlic to the pot and cook until softened, about 5-7 minutes.
  • Stir in crushed tomatoes, tomato paste, chicken broth, oregano, basil, and thyme. Bring to a boil.
  • Add lasagna noodles to the pot and cook until tender, about 10-12 minutes.
  • Season with salt, pepper, and a pinch of red pepper flakes to taste.
  • Serve hot, garnished with a dollop of ricotta cheese, a sprinkle of Parmesan cheese, Mozzarella Cheese and fresh basil leaves.
