Instructions

  • Preheat oven to 350°F (175°C). Line several baking sheets with parchment paper or silicone mats. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. In a large bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the large egg, vanilla extract, and almond extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  • Divide the dough into 3-4 equal portions. For each portion, add a tiny drop of gel food coloring and gently knead it into the dough until the color is evenly distributed. On a lightly floured surface, roll out each colored dough portion to about 1/4 inch thickness. Use a small round cookie cutter (about 1.5-2 inches in diameter) to cut out shapes. Carefully transfer the cutouts to your prepared baking sheets, leaving about an inch between each cookie.
  • Bake for 8-10 minutes, or until the edges are just barely golden and the centers are set. The cookies should still look pale. Let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • While cookies are cooling, in a large bowl, using an electric mixer, beat the softened unsalted butter on medium speed until light and fluffy, about 2-3 minutes. Gradually add the powdered sugar, about half a cup at a time, beating well after each addition. Add the pure vanilla extract and a tiny pinch of salt. Slowly add the heavy cream or milk, a tablespoon at a time, until the buttercream reaches a smooth and spreadable consistency.
  • Once cookies are completely cooled, pair them up by size and color. Take one cookie and pipe or spread a generous dollop of vanilla buttercream onto its flat side.
