  • 1 cup creamy peanut butter
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • In a medium bowl, combine the peanut butter, powdered sugar, and vanilla extract.
  • Mix well until a dough-like consistency forms. If the mixture is too wet, add more powdered sugar, 1 tablespoon at a time. If it’s too dry, add more peanut butter, 1 tablespoon at a time.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up.
  • Use a small cookie scoop or tablespoon to portion out the mixture. Roll each portion into a ball.
  • Optional: Roll the balls in chopped nuts, dip them in melted chocolate, or sprinkle them with sea salt.
  • Store the peanut butter balls in an airtight container in the refrigerator for up to a week or in the freezer for up to a month.
