Instructions
In a large bowl, cream together the softened butter and peanut butter until smooth. Add the powdered sugar and vanilla extract. Mix until well combined. The mixture will be thick.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This will make the dough easier to handle.
Roll the dough into 1-inch balls. Place them on a baking sheet lined with parchment paper.
In a double boiler or microwave, melt the chocolate chips until smooth. If using a microwave, heat in 30-second intervals, stirring in between, to prevent burning.
Dip each peanut butter ball into the melted chocolate, using a fork or dipping tools to coat completely. Place the dipped balls back on the parchment-lined baking sheet.
Sprinkle with your favorite toppings, such as sprinkles, chopped nuts, or sea salt, while the chocolate is still wet.
Refrigerate the Peanut Butter Balls for at least 30 minutes to allow the chocolate to set completely.
Once the chocolate is firm, your Peanut Butter Balls are ready to serve!
