  • 2 Ripe Bananas
  • 1/2 cup Peanut Butter
  • 1 1/2 cups Rolled Oats (Old-Fashioned Oats)
  • 1 cup All-Purpose Flour
  • 1/2 cup Brown Sugar
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Optional Add-ins (Chocolate chips, chopped nuts, raisins, or dried cranberries)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mash the ripe bananas.
  • Add the peanut butter, rolled oats, all-purpose flour, brown sugar, egg, vanilla extract, baking soda, and salt to the mashed bananas. Mix until just combined. Be careful not to overmix.
  • Stir in any optional add-ins, such as chocolate chips, chopped nuts, raisins, or dried cranberries.
  • Chill the dough for at least 30 minutes.
  • Use a cookie scoop to drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  • Let the cookies cool completely on the baking sheet before transferring them to a wire rack.
