  • 1 cup (2 sticks) Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Peppermint Extract
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Salt
  • Red Food Coloring: Gel food coloring preferred
  • Crushed Peppermint Candies: For decoration
  • Instructions

  • Cream together the softened butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla and peppermint extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Divide the dough in half. Tint one half with red food coloring.
  • Wrap each dough separately and chill for at least 2 hours, or preferably overnight.
  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • Roll out each dough into a rectangle. Place the red dough on top of the white dough and gently roll them together to create a swirl.
  • Slice the dough into ½ inch thick cookies.
  • Place cookies on the prepared baking sheets and sprinkle with crushed peppermint candies.
  • Bake for 8-10 minutes, or until lightly golden around the edges.
  • Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
