  • 1 Fresh Pineapple, chopped into chunks
  • 1 large Bell Pepper, diced
  • 1/2 Red Onion, diced
  • 3 cloves Garlic, minced
  • 1 inch Fresh Ginger, grated
  • 1/4 cup Soy Sauce, divided
  • 2 tablespoons Rice Vinegar, divided
  • 1 teaspoon Sesame Oil
  • 2 tablespoons Honey, divided
  • 1/2 teaspoon Red Pepper Flakes (or more, to taste)
  • 1 tablespoon Cornstarch, divided
  • 1 cup Jasmine Rice
  • 1 tablespoon Vegetable Oil
  • 1/2 cup Pineapple Juice
  • 1/4 cup Fresh Cilantro, chopped
  • 1 teaspoon Toasted Sesame Seeds

Instructions

  • Dice your chicken breasts into bite-sized pieces. In a medium bowl, combine half of your soy sauce, a splash of rice vinegar, the sesame oil, a drizzle of honey, and a pinch of red pepper flakes with 1 teaspoon of cornstarch. Whisk until smooth, then toss the chicken in this marinade. Let it sit for at least 15 minutes. While the chicken marinates, cook jasmine rice according to package directions. Chop fresh pineapple into chunks, dice bell peppers and red onion. Mince garlic and grate fresh ginger.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add your marinated chicken in a single layer and sear until golden brown on all sides (5-7 minutes). Remove chicken and set aside. In the same pan, add a little more oil if needed. Add diced bell peppers and red onion, sautéing for 3-4 minutes until softened. Add minced garlic and grated ginger, stirring constantly for 30 seconds until fragrant. Return the chicken to the pan along with the pineapple chunks. Stir gently to combine.
  • In a small bowl, whisk together the pineapple juice, remaining soy sauce, remaining honey, and the rest of your rice vinegar. In a separate tiny bowl, dissolve 1 tablespoon of cornstarch (or two, for thicker sauce) in 1 tablespoon of cold water to create a slurry. Pour the pineapple juice mixture into the skillet with your chicken and vegetables, bringing it to a gentle simmer. Once simmering, slowly pour in the cornstarch slurry while stirring continuously until the sauce thickens into a glossy glaze. Allow it to simmer for another 2-3 minutes, ensuring the chicken is fully cooked through.
  • Spoon generous portions of the fragrant jasmine rice onto plates or into bowls. Artfully arrange the glistening pineapple chicken mixture over the rice. Garnish generously with freshly chopped cilantro and a flourish of toasted sesame seeds. Serve immediately.
