  • 1 teaspoon pure vanilla extract
  • 1 fresh pineapple (about 2 lb)
  • 3 cups vegetable oil
  • 0.5 cup powdered sugar
  • 1 teaspoon ground cinnamon (for dusting)

Instructions

  • Carefully peel, core, and cut the fresh pineapple into 1/2-inch thick rings, or 1-inch bite-sized chunks. Lay them out on a paper towel-lined plate to absorb any excess moisture. In a large mixing bowl, whisk together 1 ½ cups of all-purpose flour, 2 tablespoons of granulated sugar, 2 teaspoons of baking powder, ½ teaspoon of salt, ½ teaspoon of ground cinnamon, and ¼ teaspoon of ground nutmeg. In a separate medium bowl, whisk together 1 large egg, ¾ cup of whole milk, and 1 teaspoon of pure vanilla extract until smooth.
  • Create a well in the center of your dry ingredients and pour the wet mixture in. Stir gently with a spoon or whisk until just combined. The batter should be slightly lumpy; avoid overmixing. The consistency should be thick enough to coat the pineapple. Cover the batter and let it rest in the refrigerator for at least 15-20 minutes, or up to 30 minutes. While the batter rests, heat about 2-3 inches of vegetable oil in a large heavy-bottomed pot or Dutch oven over medium-high heat until it reaches 350-375°F (175-190°C). Use a candy thermometer for accuracy.
  • In a small, shallow bowl or a pie plate, whisk together 1/2 cup of powdered sugar with 1 teaspoon of ground cinnamon until thoroughly combined.
  • Dip each pineapple piece into the chilled batter, allowing excess to drip off. Carefully place a few battered pineapple pieces into the hot oil, ensuring not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown and crispy. Use a slotted spoon to flip them to ensure even cooking.
  • As each batch of frizzers emerges from the hot oil, immediately transfer them with a slotted spoon or spider tool onto a plate lined with paper towels to drain any excess oil. Working quickly while they are still piping hot, gently toss or dust each fritter generously in the prepared cinnamon sugar mixture. Arrange the dusted fritters on a clean serving platter and serve warm.
  • Allow any leftovers to cool completely to room temperature. Place them in a single layer in an airtight container lined with paper towels and store at room temperature for up to 1 day, or refrigerate for up to 2-3 days. Reheat in a toaster oven or air fryer at 350°F (175°C) for 5-10 minutes.
