  • 1/2 teaspoon Salt
  • 1 cup (2 sticks) Unsalted Butter, softened
  • 1 1/2 cups Granulated Sugar
  • 1 Large Egg
  • 1 tablespoon Fresh Lemon Zest
  • 2 tablespoons Fresh Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 2-4 drops Red Food Coloring (for cookies)
  • 2 cups Powdered Sugar
  • 3-4 tablespoons Fresh Lemon Juice
  • 1-2 drops Red Food Coloring (for glaze)

Instructions

  • Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper or silicone mats. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  • In a large bowl, using an electric mixer, cream together the softened unsalted butter and granulated sugar until the mixture is light, fluffy, and pale in color, about 2-3 minutes.
  • Beat in the large egg until fully combined, followed by the fresh lemon zest, fresh lemon juice, and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  • Add 1-2 drops of red food coloring to the dough and mix until a desired pastel pink hue is achieved. Add more if needed.
  • Scoop tablespoons of dough and roll them into smooth balls. Place them about 2 inches apart on your prepared baking sheets.
  • Bake for 8-10 minutes, or until the edges are lightly golden and the centers are just set but still look soft. Do not overbake.
  • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  • While the cookies cool, prepare the glaze: In a small bowl, whisk together the powdered sugar and fresh lemon juice until a smooth, thick, yet pourable consistency is achieved. Add 1-2 drops of red food coloring and stir until uniform and pastel pink.
  • Once the cookies are completely cooled, dip the tops of each cookie into the glaze, allowing excess to drip off, or drizzle generously with a spoon. Place glazed cookies back on the wire rack (with parchment underneath) to set for at least 30 minutes, or until firm.
