  • Gather all your ingredients and a very tall, sturdy mixing bowl – preferably a metal one chilled in the freezer for 10-15 minutes, as cold helps immensely with the fluffing process. Begin by placing your ice cubes into the chilled mixing bowl. You want a substantial amount of ice, covering the bottom of the bowl completely. Next, add your chosen protein powder directly over the ice. Be sure to use a good quality whey isolate for the best results, as it tends to fluff up more effectively. Then, sprinkle in your sugar substitute and the xanthan gum. The xanthan gum is our secret weapon here; it’s what provides the incredible stability and volume.
