Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Unfold the puff pastry sheet on a lightly floured surface. Use a rolling pin to gently roll it out to about a 12×12 inch square.
Use a sharp knife or pizza cutter to cut out Christmas tree shapes from the puff pastry.
Place half of the puff pastry trees on the prepared baking sheet. Spread each tree with a thin layer of pizza sauce, leaving a small border around the edges.
Sprinkle each tree with shredded mozzarella cheese, followed by pepperoni, green bell pepper, and black olives.
Carefully place the remaining puff pastry trees on top of the topped trees, creating a sandwich. Gently press the edges together to seal.
In a small bowl, whisk together the egg and a tablespoon of water. Brush the tops of the puff pastry trees with the egg wash.
Sprinkle the tops of the trees with Italian seasoning.
Bake for 12-15 minutes, or until the puff pastry is golden brown and the cheese is melted and bubbly.
Let the pizza bites cool slightly on the baking sheet before serving. These are best served warm, but they can also be enjoyed at room temperature.
