  • 1/2 cup fresh raspberries, mashed

Instructions

  • In a mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently fold in the mashed raspberries until evenly distributed throughout the dough.
  • Cover the dough and chill it in the refrigerator for at least 1 hour.
  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • Using a cookie scoop, portion out the dough and place the cookie dough balls on the prepared baking sheet.
  • Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
