1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup fresh raspberries, mashed
Instructions
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Gently fold in the mashed raspberries until evenly distributed throughout the dough.
Cover the dough and chill it in the refrigerator for at least 1 hour.
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
Using a cookie scoop, portion out the dough and place the cookie dough balls on the prepared baking sheet.
Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
