Ingredients

Scale
  • 200 grams of dark chocolate (at least 70% cocoa)
  • 150 grams of raspberry puree (from fresh raspberries)
  • 120 ml of heavy cream
  • 50 grams of unsalted butter
  • 1 teaspoon of vanilla extract
  • Pinch of salt

Instructions

  • Blend the fresh raspberries in a food processor until smooth, then strain to remove seeds.
  • In a saucepan over low heat, warm the heavy cream until it’s just about to simmer. Stir to prevent scorching.
  • Pour the hot cream over a bowl of chopped chocolate. Let it sit for a minute before whisking until smooth.
  • Stir the raspberry puree and butter into the ganache until fully incorporated. A glossy finish indicates perfection.
  • Cover and refrigerate the mixture for at least 2 hours, or until firm.
  • Using a melon baller or teaspoon, scoop portions of the ganache and roll into balls with your hands.
  • Melt more chocolate and dip each truffle to coat. Place on a baking sheet lined with parchment paper to set.
