  • 10 ml white vinegar

Instructions

  • Preheat oven to 350°F (175°C) or prepare oil for frying to 350-375°F (175-190°C). Grease donut pans thoroughly.
  • In a large bowl, whisk together flour, granulated sugar, cocoa powder, baking soda, and salt.
  • In a separate medium bowl, combine buttermilk, large egg, melted unsalted butter, vanilla extract, red food coloring, and white vinegar. Whisk until vibrant and uniform.
  • Gradually add wet ingredients to dry ingredients, mixing with a spoon or spatula until just combined. Do not overmix. Batter should be thick and smooth.
  • For baking, pipe batter into prepared donut molds, filling each about half to two-thirds full. Bake for 10-12 minutes, or until springy and a wooden skewer comes out clean.
  • For frying, carefully drop spoonfuls of batter into hot oil, frying for 2-3 minutes per side until golden brown and cooked through.

  • To make cream cheese glaze: In a medium bowl, beat softened cream cheese and softened unsalted butter until light and smooth.
  • Gradually add powdered sugar, beating well after each addition. Stir in vanilla extract and a pinch of salt.
  • Add milk or heavy cream, one tablespoon at a time, until desired pourable consistency is reached.
  • Once donuts are completely cool, dip the top of each donut into the glaze, twisting slightly for even coating. Allow excess glaze to drip off.
  • Place glazed donuts on a wire rack over a baking sheet and let the glaze set for 15-20 minutes.
