Epic fudge recipe, decadent red velvet.

Ingredients

Scale
  • 1/2 cup (113 grams) unsalted butter
  • 3 cups (600 grams) granulated sugar
  • 1 can (12 oz) evaporated milk
  • 2 cups (340 grams) white chocolate chips
  • 5 cups (280 grams) miniature marshmallows
  • 2 teaspoons vanilla extract
  • 1-2 tablespoons red gel food coloring
  • 1/4 cup (22 grams) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 8 ounces (226 grams) cream cheese, softened
  • 1/2 cup (113 grams) unsalted butter, softened
  • 4 cups (480 grams) powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (optional)

Instructions

  • Prepare a 9×13 inch baking pan by lining it with parchment paper, leaving an overhang on the sides. Lightly grease the parchment paper.
  • In a large, heavy-bottomed saucepan, combine the unsalted butter, granulated sugar, and evaporated milk. Place over medium heat, stirring constantly until it reaches a rolling boil.
  • Continue to boil for exactly 5 minutes, stirring continuously to prevent scorching.
  • Immediately remove from heat. Swiftly add the white chocolate chips, miniature marshmallows, vanilla extract, red gel food coloring, unsweetened cocoa powder, and salt.
  • Stir vigorously until all chocolate chips and marshmallows are completely melted and the mixture is perfectly smooth, vibrant, and uniformly colored.
  • Immediately pour the hot fudge mixture into your prepared pan, spreading it evenly with an offset spatula.
  • While the fudge base is still warm, drop spoonfuls of prepared cream cheese frosting (see instructions below) randomly over the surface of the fudge.
  • Using a butter knife or skewer, gently swirl the frosting into the fudge to create elegant patterns. Do not over-swirl.
  • Allow the fudge to cool completely at room temperature for several hours, or refrigerate for 2-3 hours until firm.
  • Once firm, use the parchment paper overhangs to lift the entire block of fudge from the pan onto a cutting board. Cut into desired squares.
  • To make the Cream Cheese Frosting Swirl: In a medium-sized bowl, combine the softened cream cheese and unsalted butter. Beat with an electric mixer on medium speed until light, fluffy, and smooth (2-3 minutes).
  • Gradually add the powdered sugar, one cup at a time, beating well after each addition. Start on low speed.
  • Once all powdered sugar is incorporated, add vanilla extract and beat on medium-high speed for 1-2 minutes until light, airy, and creamy.
  • If the frosting is too thick, add 1-2 tablespoons of milk, 1 teaspoon at a time, until a spreadable but firm consistency is reached.
