Ingredients

  • 500 grams of lamb shoulder
  • 200 grams of yogurt
  • 2 red onions, chopped
  • 2 tablespoons ginger-garlic paste
  • 2 cinnamon sticks
  • 4 cloves
  • 4 green cardamom pods
  • 2 tablespoons Kashmiri red chili powder
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 1 teaspoon saffron threads, soaked in 3 tablespoons warm milk
  • 3 tablespoons mustard oil

Instructions

  • Marinate the lamb with yogurt, ginger-garlic paste, and spices for at least 4 hours, preferably overnight.
  • Heat mustard oil in a heavy-bottomed pot.
  • Add onions and sauté until golden brown.
  • Add marinated lamb to the pot and cook until the lamb is browned.
  • Stir in extra spices, saffron-infused milk, and water as needed.
  • Simmer the dish on low heat for 1.5 hours until lamb is tender and the spices are well blended.
  • Serve hot with basmati rice or naan bread.
