Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Green food coloring
  • Sprinkles for decoration

Instructions

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the egg and vanilla extract to the butter mixture, and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Divide the dough in half, and tint one half green with the food coloring.
  • Roll out each portion of dough between two sheets of parchment paper until about 1/4 inch thick.
  • Chill the dough in the refrigerator for at least 1 hour.
  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Using a shamrock-shaped cookie cutter, cut out cookies from the dough, and place them on the prepared baking sheet.
  • Decorate the cookies with sprinkles, if desired.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
