  • 2 lbs boneless, skinless chicken thighs (cut into 1-inch pieces)
  • 1.5 lbs Yukon Gold potatoes, peeled and cubed
  • 1 lb carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 bay leaf
  • 1 tbsp Worcestershire sauce
  • Salt and Pepper to taste
  • 1 cup frozen peas or green beans (optional)
  • Fresh parsley, chopped (optional garnish)

Instructions

  • Place chicken thighs, potatoes, carrots, celery, onion, garlic, chicken broth, tomato paste, thyme, rosemary, bay leaf, and Worcestershire sauce in a slow cooker.
  • Season with salt and pepper to taste.
  • Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is tender and vegetables are cooked through.
  • If adding frozen peas or green beans, stir them in during the last 30 minutes of cooking.
  • Remove bay leaf before serving. Garnish with fresh parsley, if desired.
