  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  • In a separate bowl, whisk together the melted butter, eggs, milk, vanilla extract, and vegetable oil.
  • Pour the wet ingredients into the dry ingredients and mix just until combined. Do not overmix.
  • Fill the muffin cups about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  • In a small bowl, combine the granulated sugar and cinnamon for the coating.
  • Brush the top of each muffin with a little melted butter and then dip it into the cinnamon-sugar mixture, coating evenly.
