Southern Chicken Casserole Cheesy Spicy Spaghetti

  • 1 pound spaghetti
  • 3 cups cooked chicken, shredded
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (10.75 ounce) can cream of chicken soup
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 2 cups cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup bell pepper, diced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F (175°C). Cook spaghetti according to package directions until al dente. Drain and set aside.
  • In a large bowl, combine cooked spaghetti, shredded chicken, cream of mushroom soup, cream of chicken soup, diced tomatoes and green chilies, cheddar cheese, Monterey Jack cheese, onion, garlic, bell pepper, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  • Mix well to combine all ingredients.
  • Pour mixture into a greased 9×13 inch baking dish.
  • Bake for 30-35 minutes, or until bubbly and golden brown.
  • Let stand for 10-15 minutes before serving.
