  • 1.25 pounds (600g) salmon fillets
  • 3 cups cooked rice
  • Sriracha (to taste)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 2 cloves minced garlic
  • 1 teaspoon grated ginger
  • ½ teaspoon sesame oil
  • Toasted sesame seeds (for garnish)
  • Green onions (sliced, for garnish)
  • Optional toppings: Avocado slices, edamame, shredded carrots, cucumber, pickled ginger, seaweed snacks, spicy mayo
  • Instructions

  • Preheat oven to 400°F (200°C).
  • In a small bowl, whisk together sriracha, soy sauce, honey or maple syrup, rice vinegar, garlic, ginger, and sesame oil.
  • Place salmon fillets on a baking sheet lined with parchment paper. Brush generously with the sriracha glaze.
  • Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork. Broil for 1-2 minutes for a crispy glaze.
  • Assemble bowls: Divide cooked rice among bowls. Top with salmon, desired toppings, sesame seeds, and green onions.
  • Serve immediately and enjoy!
