  • 24 button mushrooms
  • 150 grams of fresh spinach
  • 225 grams of cream cheese
  • 50 grams of Parmesan cheese
  • 2 cloves of garlic, minced
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  • Preheat your oven to 375°F (190°C).
  • Clean your mushrooms using a damp paper towel. Remove and set aside the stems.
  • If using fresh spinach, sauté with olive oil until wilted, then drain and chop. Thaw and drain thoroughly if using frozen spinach.
  • In a bowl, mix cream cheese, chopped spinach, Parmesan, minced garlic, onion powder, salt, and pepper.
  • Fill each mushroom cap with the spinach mixture.
  • Place stuffed mushrooms on a baking tray lined with parchment paper. Drizzle olive oil on top of each mushroom.
