Springtime Fruit Salad

Refreshingly light, vibrant fruit salad for spring.

  • 2 cups strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 2 kiwis, peeled and sliced
  • 1/2 cantaloupe, cubed
  • 1/2 honeydew melon, cubed
  • 4 mandarin oranges or Cuties, peeled and segmented
  • 1 cup red grapes
  • 1 cup green grapes
  • 1/4 cup fresh mint leaves, chopped
  • 1 tablespoon powdered sugar (for garnish)
  • For the Zesty Honey-Lime Mint Dressing:
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon fresh mint, finely chopped
  • 1 teaspoon lime zest
  • 1 pinch of salt

Instructions

  • Gather all your beautiful fruit and give it a thorough, gentle bath. Once washed, lay your fruit out on clean kitchen towels to air dry a bit, or carefully pat them dry. Hull the strawberries and slice them into halves or quarters. Peel the kiwi and slice into attractive rounds or half-moons. For the melon, cut both the cantaloupe and honeydew in half, scoop out the seeds, then carefully cut the flesh into beautiful, uniform bite-sized cubes. Peel the mandarin oranges and separate them into segments. For the grapes, simply pluck them from their stems.
  • In a very large, wide mixing bowl, gently combine all your prepared fruits: strawberries, blueberries, raspberries, blackberries, kiwi, cantaloupe, honeydew, mandarin oranges, red grapes, and green grapes. In a small bowl or jar, whisk together the fresh lime juice, honey, finely chopped mint, lime zest, and just a tiny pinch of salt. Taste the dressing and adjust the honey or lime juice to your preference.
  • Pour about three-quarters of the dressing evenly over the fruit in the large bowl. Using a large, soft spatula or your impeccably clean hands, gently toss the fruit salad to ensure every piece is lightly coated with the dressing. Add more dressing if desired. For the best flavor, cover the bowl and chill the salad in the refrigerator for at least 30 minutes before serving.
