  • 1 cup green candy melts
  • 1 teaspoon shortening or coconut oil
  • 1/4 teaspoon green luster dust

  • 12 sturdy lollipop sticks
  • 1/4 cup assorted St. Patrick’s Day sprinkles
  • 6 fudge stripe cookies
  • 1 tablespoon mini chocolate chips
  • 6 edible royal icing shamrocks
  • 1 tablespoon edible gold pearls
  • 1 tablespoon white nonpareils

Instructions

  • Prepare a large baking sheet by lining it with parchment paper or wax paper. Unwrap all your large marshmallows and set them aside. Carefully insert a sturdy lollipop stick about halfway into the flat end of each marshmallow, twisting gently as you push to avoid splitting.
  • Place the green candy melts in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly after each interval, until the melts are smooth and fluid. If the candy melts are too thick, add a teaspoon of shortening or coconut oil, stir well, and continue microwaving in short bursts until you reach a smooth, dippable consistency.
  • Take one marshmallow pop, dip it into the melted green candy, rotating gently to ensure complete coverage. Lift the pop out of the candy and gently tap the stick against the edge of the bowl to remove any excess.
  • Immediately after dipping and tapping off excess candy melt, hold the pop over a small bowl of your chosen sprinkles. Gently rotate and jiggle the pop to allow an even coating of sprinkles to adhere. For specific designs like royal icing shamrocks or mini chocolate chip “eyes,” carefully place them onto the wet candy melt with tweezers or your fingers. If creating a “leprechaun hat,” gently press a fudge stripe cookie onto the top of the still-wet coated marshmallow. For extra sparkle, lightly brush edible green luster dust or sprinkle edible gold glitter over the still-wet candy.
