  • 2 scallions, chopped
  • 1/4 cup of cilantro, chopped

Instructions

  • In a bowl, combine sweet chili sauce, soy sauce, lime juice, minced garlic, and grated ginger. Whisk until well blended.
  • Place the chicken thighs in a resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes.
  • Set your oven to 400°F (200°C). While waiting, line a baking tray with parchment paper for easy cleanup.
  • In a hot skillet, add vegetable oil. Once shimmering, sear the marinated chicken thighs skin-side down for about 4 minutes per side or until golden brown. This locks in the moisture and flavor.
