  • 6-8 cups water (for boiling pearls)
  • 1 cup brown sugar
  • 1/2 cup water (for syrup)

Instructions

  • Bring a generous pot of water (at least 6-8 cups for every cup of tapioca pearls) to a rolling boil over high heat. Gently add the tapioca pearls. Stir them immediately and continuously for the first minute or two to prevent them from sticking to the bottom. Reduce heat to medium-high, maintaining a strong boil, and cook for 15-20 minutes, stirring occasionally. The pearls should become mostly translucent with a tiny white dot in the center. Remove from heat, cover, and let rest in hot water for another 10-15 minutes. Drain through a fine-mesh sieve and rinse thoroughly under cold running water to stop cooking and remove excess starch.
  • In a small saucepan, combine the brown sugar and water. Place over medium heat, stirring continuously until the sugar is completely dissolved. Bring to a gentle simmer and cook for about 5-7 minutes until it thickens slightly to a pourable syrup consistency. Remove from heat and stir in the vanilla extract.
  • Once your perfectly cooked and rinsed tapioca pearls are glistening and cool, gently transfer them into a bowl. Pour the warm brown sugar syrup generously over the pearls. Using a spoon or spatula, delicately toss the pearls until each one is evenly coated in the rich, glossy syrup. Serve immediately while fresh and wonderfully chewy.
