Valentine snack mix: sweet, salty bliss.

Ingredients

Scale
  • 4 cups Miniature Pretzels
  • 3 cups Crispy Rice Cereal
  • 3 cups Chex Cereal (Rice or Corn)
  • 1 cup Roasted Peanuts
  • 1 cup Roasted Cashews
  • 1/2 cup (1 stick) Butter
  • 1/2 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Freeze-Dried Raspberries or Strawberries
  • 1 cup Dark Chocolate Chips or Bar
  • 1 cup White Chocolate Chips or Bar
  • 1 teaspoon Vegetable Oil or Coconut Oil (divided)
  • 1/4 cup Valentine’s Sprinkles

Instructions

  • Preheat your oven to 275°F (135°C). Line a large, rimmed baking sheet with parchment paper or a silicone baking mat.
  • In a very large heat-proof bowl, combine the miniature pretzels, crispy rice cereal, Chex cereal, roasted peanuts, and roasted cashews. Stir gently until everything is nicely distributed.
  • In a medium saucepan, combine the butter, brown sugar, granulated sugar, vanilla extract, and cinnamon. Place over medium heat and stir constantly until the butter is completely melted and the sugars have dissolved. Once it comes to a gentle simmer, let it bubble for 1-2 minutes, stirring occasionally.
  • Carefully pour the hot glaze evenly over your snack mix in the large bowl. Using a sturdy spatula or large spoon, gently but thoroughly toss the mixture until every piece is coated in the glaze.
  • Spread the mixture out onto your prepared baking sheet in a single, even layer. If needed, divide the mix between two sheets.
  • Bake for 45-60 minutes, stirring every 15 minutes to ensure even toasting and prevent burning. The mix is done when it’s golden brown, toasty, and crisp.
  • Remove from the oven and immediately sprinkle with the salt. Let it cool completely on the baking sheet until crisp.
  • While cooling, prepare the chocolate drizzles. For the dark chocolate, place chips/bar in a microwave-safe bowl. Add 1/2 teaspoon vegetable or coconut oil. Microwave in 30-second intervals, stirring after each, until melted and smooth.
  • Repeat the process with the white chocolate in a separate bowl, adding another 1/2 teaspoon of oil.
  • Once the snack mix is completely cool, scatter the freeze-dried raspberries or strawberries evenly over the mix.
  • Using a spoon or whisk, drizzle the melted dark chocolate back and forth over the snack mix. Repeat with the melted white chocolate, creating a marbled effect.
  • Immediately after drizzling, shower the entire mix with Valentine’s sprinkles. Allow the chocolate to set completely at room temperature (about an hour) or refrigerate for 15-20 minutes for a quicker set.
