  • 2 cups Fritos Corn Chips (crushed gently)
  • 8 ounces Cream Cheese (softened)
  • 1/2 cup Sour Cream (plus extra for serving)
  • 2 tablespoons Taco Seasoning (homemade or high-quality store-bought)
  • 1/2 cup Salsa (thicker consistency recommended)
  • 4 ounces Diced Green Chiles (canned, drained)
  • 2 cups Cheddar Cheese (shredded)
  • 1 cup Monterey Jack Cheese (shredded)
  • 1 small Onion (diced)
  • 2 cloves Garlic (minced)
  • 1/4 cup Cilantro (fresh, chopped, for garnish)
  • 2 cups Shredded Lettuce
  • 1 cup Diced Tomatoes
  • 1/2 cup Sliced Black Olives
  • 1 large Avocado (diced or sliced)
  • Hot Sauce (for serving, optional)

Instructions

  • Preheat oven to 375°F (190°C). Lightly spray a 9×13 inch baking dish with cooking spray.
  • In a large skillet over medium-high heat, brown the ground beef with the diced onion, breaking it up as it cooks. Drain off any excess grease.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add taco seasoning, salsa, and diced green chiles to the beef mixture. Stir well and simmer gently for 5-7 minutes, allowing flavors to meld and sauce to thicken slightly.
  • While the beef simmers, combine softened cream cheese and sour cream in a separate medium bowl. Whisk until smooth and creamy.
  • Spread about half of the Fritos in an even layer at the bottom of the prepared baking dish.
  • Spoon half of the seasoned ground beef mixture over the Fritos.
  • Dollop half of the cream cheese and sour cream mixture over the beef, then sprinkle with half of the shredded cheddar and Monterey Jack cheeses.
  • Repeat the layers: remaining Fritos, remaining ground beef, remaining cream cheese mixture, and finally, the rest of the shredded cheese blend.
  • Bake for 20-25 minutes, or until the cheese is gloriously bubbly and melted, and the Fritos around the edges are lightly golden and crispy.
  • Let the bake rest for 5-10 minutes after baking before serving to allow everything to set.
  • For fresh toppings: finely shred lettuce, dice tomatoes into small uniform cubes, thinly slice black olives, and dice or slice avocado right before serving. Arrange these and extra sour cream and salsa in separate bowls.
